On these cold winter days and nights, there is nothing better and more fulfilling than soup. A nice hot soup warms you up inside from your head to your toes. Now, one soup that I love to make during these chilly days is Taco Soup. It is so delicious and better yet, very simple to make. Here is what you will need.
1 pound of ground beef or turkey
1 large onion chopped
1 can of corn
1 can of pinto beans
1 can of red kidney beans
2 cans of Rotel tomatoes
1 8oz. can of tomato sauce
1 package of taco seasoning mix
1 package of ranch dressing mix
2 cups of water
Sour Cream
Shredded Monterrey Jack Cheese
Tortilla Chips
First, brown the ground beef of turkey in a skillet, and drain off the oil. Then in a large pot add the chopped onion, corn, pinto beans, kidney beans, Rotel tomatoes, tomato sauce, taco seasoning mix, ranch dressing mix and the water. Simmer for an hour, then serve with some some shredded cheese on top, a dollop of sour cream and some tortilla chips.
That is it, didn’t I tell you this was a simple recipe. All you have to do is brown the meat, chop the onions, and then dump the cans of vegetables and seasonings in. I love Taco Soup, because it is fast to make, very tasty, and will definitely warm you up on those chilly winter days. Sophia loves dipping her tortilla chips in the soup and keeps asking for more, which puts a big smile on my face.
