St. Patrick’s Day Cupcakes!

We just ended one holiday celebration, and now we are about to celebrate St. Patrick’s Day. I thought the best way to start my St. Patrick’s Day blog post would be by making some lovely St. Patrick’s Day cupcakes.

I had all my supplies at hand

  • Cake Mix
  • 3 Eggs
  • 1 1/2 water
  • Green Icing
  • Sandwich bags
  • Cupcake pan
  • Cupcake liners (any size you desire)
  • Apple Sauce or 1/2 cup of vegetable oil
  • Butter
  • White frosting (Made my own)

Well, I just basically used the cake mix directions, which is quite easy. I mixed all the ingredients in a bowl, and then blended it all together with my mixer.

I grabbed my cupcake pan, and had Sophia help me place all the cupcake liners in the pan. Now, it was time to pour the batter in the cupcake pan and bake in a pre-heated oven of 350 degrees for about 20-24 minutes.

Sophia turned on the oven light and pulled out a chair and stated that I had to sit in front of the oven just like daddy does when he makes chocolate chip cookies. LOL.  It was their routine to look at the cookies while they were rising and getting bigger.  Then in her loudest voice possible. She kept yelling, Mama, the cupcakes are getting bigger! The cupcakes are getting bigger! And then would do her little cupcake dance. LOL.  Too funny.

The cupcakes were ready to be taken out of the oven and set aside to cool. Once they were cool, I spread the white frosting on each cupcake. Then, I reached for my green decorating icing and started to create my own clover design with the help of Sophia. Now our St. Patrick’s Day cupcakes were ready to be served!

    I have never tried using applesauce – It sounds like it would make them extra moist and yummy!
