Breakfast Crepes

Most of you know that waking up after a long comfortable sleep, your tummy makes those rumbling noises that lets you know, it’s time to eat some breakfast. For those that have to go to work and do not have the time to make the important meal of the day called breakfast, we end up just picking up a quick apple, bowl of cereal, a glass of orange, hot chocolate, tea or coffee and off we go. But even if we are busy, we still need to find time at least on the weekend to make that perfect heartfelt breakfast to make up for all those days during the week.

So, I have decided to dedicate myself and family to make a great breakfast every weekend morning. Now, I decided to make a nice breakfast for the family which will include crepes with fruits to go along with it, and don’t forget the fresh squeezed mango juice. Now, doesn’t that sound absolutely delicious.

We will need the following supplies:

  • strawberries
  • blueberries
  • 2 eggs
  • 2 cups of  all-purpose Flour
  • 11/2 cups of Milk
  • 1/2 teaspoon of salt
  • 3 tablespoons of sugar (brown or white)
  • 2 tablespoon of melted butter
  • Mixing Bowl
  • Pan
  • 1/2 teaspoon of Vanilla
  • 1/2 teaspoon of Cinnamon
  • 1/4 cup of apple juice
  • Whip cream
  • A pinch of salt

First, we will prepare the crepes. Reach for a bowl and mix the eggs, melted butter, all-purpose flour, milk, sugar, cinnamon, and salt. Mix it really well until it turns into a smooth batter. Heat your pan over medium heat and add a little bit of butter. Now, reach for your scoop and pour in the crepe batter into the pan. Pick up the skillet/pan and slide it from one end to the other, so it fully covers the bottom of the pan completely. Let it sit for about a minute or so,  flip it to the other side for a minute, and then your ready to transfer it on to your plate.

Now, take the strawberries and blueberries and sprinkle them with a little sugar and apple juice. Then, add butter to the pan and saute the berries for a minute or two. After that, add the berry mixture onto a crepe. Roll up the crepe and sprinkle some cinnamon, powdered sugar, or dab a little whip cream on top.  Make as many as you like. You can even add you own favorite fruit, or even use chocolate chips and chocolate syrup. Mmmm Yummy! Now, you have freshly made crepes for the whole family to enjoy.  I love crepes, because my mom used to make this for us almost every morning, and sometimes for dinner. It was my favorite dish. LOL

    These crepes look so good! I might whip these up tomorrow-I’ll have to go out and get some butter. Do you think it would be ok to make them with whole wheat flower.

    I like to make my hubby a veggie omellete on the weekends!

      Yes, I would definitely make them with the whole wheat flour. I made it once with coconut flour and they gave the crepes that extra little flavor to them. Veggie omelette sounds just great. Thanks for sharing.

    We will over every weekend for this treat!
    We enjoy chocolate oatmeal as a weekend breakfast treat. My husband had this growing up.
    It may sound strange, but it is like eating fudge for breakfast.
    Oatmeal, milk, cinnamon toast. Yum. Loved the crepes. So pretty,too.

    I am a huge fan of crepes, especially when they come with such an amazing array of fresh fruit !!! At the moment I am experimenting with my own mix of Gluten Free flours, so far I have only been brave enough to make a batch of pancakes! But your crepes are next on the list 🙂

    Holy Christ! my mouth is watering, haha this is so cruel, it’s 3 in the morning and now I’m starving, HA.
    🙂 I’m definitely saving this recipe. Just WOW, doesn’t that look scrumptious! I remember trying a Crepe for the first time, it was at this little shop near my house, it was a chocolate crepe, it was DE-LI-CIOUS! sadly the crepe shop closed down, and I’ve got a mighty sweet-tooth and don’t really know how to whip up some recipes, nor have I ever thought *sarcasm* that the internet has recipes (it totally went by me) But this looks really yummy, I’ll be including the fruits and ingredients on my grocery list for this week 🙂 I really love strawberries and blueberries, make a really good combination.
