Chicken Satay with Peanut Sauce!

Before I start with my post, I would like to wish everyone a Happy St. Patrick’s Day.  Did you wear green today?  Now, lets start our blog post.

Do you know how long I wanted to make Chicken Satay? Well, I finally had time to make some. My mom used to make satay almost everyday for us to eat. It is so yummy and easy to make for you and your family.

Here is what you will need

  • 1 lb boneless chicken ( cut in strips)
  • Satay sticks
  • Foil wrap

Marinade for your chicken

  • 1 teaspoon of fresh grated ginger
  • 1 clove of grated garlic
  • 1 juice of a lemon
  • 2 tablespoons of soy sauce
  • 1 cup of smooth peanut butter (any brand you like)
  • 11/2 tablespoons of honey
  • 3 tablespoons of coconut milk (love this)

Satay Sauce

  • 1/2 cup of peanut butter (smooth or chunky)
  • 7 table spoon of coconut milk
  • 7 table spoon of warm water
  • 2 tsp of soy sauce
  • 1 table spoon of honey
  • 1 tsp of lemon juice

Now let’s start preparing our chicken satay. Pour in a bowl the grated ginger, garlic, lemon juice, soy sauce, smooth peanut butter and finally the coconut milk. Stir it completely, until you get a nice mixture. Now, take a few minutes and smell the marinated mixture….ohhh, the smell is just amazing. That is my favorite part. Set a side for a few minutes.

 

Get your boneless chicken and start cutting it in strips. After you cut the strips place them in a bowl, Ziploc bag or a container. Then, pour the marinade over the chicken strips and let it marinate for at least 30 minutes. If you can let it sit longer it will get even more flavorful.

Note: make sure to soak the satay sticks in water. I totally forgot to do that and the sticks got a little burned. Oops! It’s time to thread chicken strips onto one end of satay sticks. Broil or grill the chicken satay for about 10 minutes and then take them out.

For the peanut sauce, combine the crunchy peanut butter, warm water, coconut milk, soy sauce, lemon juice and honey together. Mix it well and your done. Sophia couldn’t wait for this moment to finally arrive.  She was constantly asking me “Are they ready yet? ” LOL.  Now it is time to serve the chicken satay to your friends and family. Enjoy this quick and easy recipe.

    Luv luv luv chicken satay. One of our family faves. We usu. have chicken satay and lumpia. Yum-yum! Our recipes are similar but I don’t use honey. I may have to add a little honey next time I prepare chicken satay.

    I can’t wait to try this sauce! I’ve been wanting to post chicken satays on my blog (I’m doing a year of Thai cooking) but can’t find a sauce I like (they always turn out super greasy). Hopefully this one will be the winner! And of course I’ll link back. Love your blog-glad to find it.
