No Bake Graham Cracker Pumpkin Roll Recipe

My daughter had a taste of some pumpkin pie after her grandmother made some. She said she like it very much. So my husband decided to make one for her. Instead of baking one though, he got inspired from a chocolate wafer icebox roll from the Nestle Famous Wafer box and decided to make a Graham Cracker Pumpkin Pie version for our daughter. So here is his recipe.

Ingredients:

  • Honey Maid Graham Crackers
  • 1 Pkg. Cream Cheese
  • 1 cup pureed pumpkin
  • 1/2 cup sugar
  • 1/2 tsp. pumpkin spice
  • 1/2 tsp. cinnamon
  • 13/4 cup heavy whipping cream
  • 1/2 tsp. vanilla

Beat cream cheese, pumpkin, sugar, pumpkin spice, cinnamon in a bowl until well blended. In another bowl beat the heavy whipping cream. Take out about a cup of the cream and mix in with the cream cheese and pumpkin mixture. Cover and save the remaining whipped cream.

Next, Break the graham crackers in half to make squares. Then, line a cookie sheet or platter with parchment paper. Now, add about a spoonful of the cream cheese and pumpkin mixture between two crackers, and start making little stacks of these. Make a few of these stacks, then lay them down horizontally and fill in the pieces. Finally, take the remaining whipped cream and cover the whole thing. Refrigerate for at least 4 hours. Sprinkle with graham cracker crumbs and cut diagonally.

To tell you the truth, when my husband said he was making this I had no idea what he was talking about. However, when he brought me a slice, I was completely hooked. I am now a new fan. So there you have it, my husbands No Bake Graham Cracker Pumpkin Pie Roll. I hope you all like it.  Enjoy!

    To me this almost sounds better than pumpkin pie because you can make it year round- you had me at cream cheese 🙂

    I love pumpkin and love the fact that this one seems easy enough that maybe I can get the hubby to help me this year in the kitchen for the holidays! Lol! 😉
