As most of you already know by now, we enjoy cooking and baking at my house. If I see an interesting book or recipe I will definitely try it out.  The holidays are here and everyone is in the cooking spirit trying to whip up that gourmet dinner for the family or for that special dinner party your planning.  So, when I saw the Super-Quick Muffin Tin Meals cookbook by Melanie LaDue, my mind begin to imagine the food I could make.  It has a variety of sweet, savory and simple delicious recipes which are all made in a muffin tin which are perfectly sized portions for you and your family.  Yummy comfort food with the low calories involved, that’s music to my ears.

There are 70 delicious easy recipes to be made, however I think my favorite will be the pancake bites, since my son love pancakes. I also have to try to make the S’more Pockets. They look so scrumptious!     Oh, this book looks interesting. These quick bites will be very addictive. You won’t realize how much you eat, but it sure looks yummy. This would be a gift for the family.
