Creamy Potato Soup!

Since the weather has been quite cold lately, I decided to whip up some scrumptious creamy baked potato soup topped with bacon. I know for sure that it will warm up our bodies while we are eating something delicious. I had quite a few potatoes on hand, so I had to make something that will take a majority of the potatoes. Well, what could be better than making some baked potato soup.  It was quite easy to make and I had everything on hand.

Ingredients

8 potatoes (I peeled mine)

1 onion( finely chopped)

2 stalks celery, (finely chopped)

4 baby carrots (chopped)

5 slices bacon (love bacon-for topping)

8 cups chicken broth

2 tbsp flour

1/4 cup milk

2 tsp salt

pinch of black pepper

sliced green onions (for topping)

Ahead of time, I boiled my potatoes in 1 cup of chicken broth and 1 cup of water.  Once it was done, I placed it all in a blender to puree. To get started, go ahead and fry the bacon in a pan until it is nice and crispy.  Place the crispy bacon on a paper towel to soak up all the grease. I like to save the remaining bacon grease for later, to make some scrambled eggs. Believe me, it is quite yummy!

I pour about 1 tablespoon of bacon grease in a pot and I add the chopped union, baby carrots and celery,  and saute it for approximately 5 minutes until they are a little tender.  I pour in the remaining (7 cups of chicken broth and milk in the pot and stir it for about 5 minutes and then add the pureed potatoes in the mixture.  I add pepper and salt and bring it to boil, then reduce the heat and simmer for about 15 minutes.

Now, it it was time to serve my family with this yummy creamy soup.  I topped it off with some chopped, crispy-crumbly bacon and sliced green onions.  Voila!  All done.  It was a delicious creamy soup for the right occasion.  My family definitely liked it and ate it all up.  I hope you all will enjoy this recipe as much as my family and I did.  Enjoy and until next time.

    I love that you used a little bacon grease to add flavor when cooking up the veggies. What a great suggestion. This sounds absolutely delicious!! I can’t wait to try it. 🙂

    So funny! I literally just said that I needed to find a new potato soup recipe…I found one through a google search and it’s okay, but clumps up as soon as it cools. When you try to reheat it, the clumps just don’t go away. The boys started calling it clump soup.

    This is perfect for these cold, wintry days we’ve had the past few days! My mom used to make the best potato soup. Nothing like homemade soup.
